It matters what channel you're watching when you try, apparently.  From the Ole Miss/Kentucky game on ESPN I was able to have my pick of what I wanted to put on multi view, but the Kansas/Missouri game on ESPN2 wasn't an option. 

I turned to the Kansas/Missouri game on ESPN2 and didn't have any options for customizing multi view.

So I have Ole Miss/Kentucky and USF/Florida on.
